Kıbrıs Mutfağı, Kıbrıs Adası’ndan geçen, bir çok medeniyetin etkisi ile harmanlanarak, zenginleştirilmiş, somut olmayan yiyecek, içecek, kültürel mirasının önemli bir parçası olmuştur. Kitapta yer alan yemek ve içeceklerin bir çoğu, annelerimizin, nenelerimizin yaptığı, bizim de onlardan öğrendiğimiz tariflerdir. Annemi gerçeğe uğurladıktan sonra, özellikle, çok güzel yaptığı pilavuna, çörek ve kabak böreğini, her yediğimde, anneciğimin kokusunu, sanki iliklerime kadar hissederim. Hızla değişen ve dönüşen Dünyada, yeni, ve çabuk hazırlanan yemek çeşitleri, tüketiciye sunulmaktadır. Bu durum karşısında, özümüzü korumak, mutfak kültürümüzü yaşatmaya çalışmak, sürdürülebilirliğini sağlayarak, gelecek kuşaklara aktarmak, hepimizin sorumluğudur. Kıbrıs Mutfağı’ndan, Gastronomi turizminde, yeteri kadar faydalanmak için, çaba gösterilmasi elzemdir. Son zamanlarda, ulusal mutfaklar, turistlerin Destinasyon seçimlerinde etkili olmaya başlamıştır. Turistler, gidecekleri yerlere özgü yiyecek ve içecekler tatmayı, bu ürünleri, o coğrafyada deneyimlemeyi istemektedirler. Kitap içeriği için araştırma sürecinde, Porto tatlısına, adını veren ailenin tarifi vermek, hikayesini anlatmak için yaşadığı heyecana tanıklık etmek ise; hepimiz için ayrıca, güzel bir anı oldu. KKTC Cumhurbaşkanlığı Kültür Yayınlarının, ilki olan bu kitabı, kültürümüzün çok önemli bir kısmını temsil eden Kıbrıs Mutfağını yaşatmak, kayıt altına alıp, gelecek nesillere aktarmak için, 3 değerli hocamıza ile birlikte hazırladık. Bu bağlamda, kitaba katkı sağlayan başta, hocalarımıza, çekimler için evlerini, mekanlarını açanlara ve tüm emek verenlere teşekkür eder, somut ve soyut kültürel mirasımızın dünya döndükçe parlayarak, gerçek değerini bulmasını ve yaşatılmasını dilerim. Cypriot Cuisine has become an important part of the intangible food, beverage and cultural heritage that has been enriched by the influence of many civilizations that have passed through the Island of Cyprus. Many of the dishes and beverages in the book are recipes that our mothers and grandmothers made and that we learned from them. After sending my mother off to reality, I feel the smell of my mother in my bones every time I eat her delicious pilaf, buns and zucchini pastry. In a rapidly changing and transforming world, new and quickly prepared food varieties are offered to the consumer. In the face of this situation, it is the responsibility of all of us to protect our essence, try to keep our culinary culture alive, ensure its sustainability and pass it on to future generations. It is essential to make an effort to benefit sufficiently from Cypriot Cuisine in gastronomy tourism. Recently, national cuisines have started to be effective in tourists' destination choices. Tourists want to taste food and beverages specific to the places they will visit and experience these products in that geography. During the research process for the content of the book, witnessing the excitement of the family that gave its name to the Porto dessert to give the recipe and tell its story was also a beautiful memory for all of us. We prepared this book, the first of the TRNC Presidency of Culture Publications, together with our 3 valuable teachers in order to keep alive, record and pass on to future generations the Cypriot Cuisine, which represents a very important part of our culture. In this context, I would like to thank our teachers, those who contributed to the book, those who opened their homes and venues for the shootings and all those who worked hard, and I hope that our tangible and intangible cultural heritage will shine as the world turns, find its true value and be kept alive.
